I’ve mainly kept American cichlids and characins so a different route would be niceI'll second what others have said, sell off/rehome your old stock and get some new fish you never had before. That 125gal is a good base to start with.
What have you been into so far? If mostly cichlids then change it up for a massive planted community tank. With lots of different active fish. Have you done an African tank yet. All male peacock tanks are stunning in colors and activity. Maybe a rock dwelling Mumba tank. Or take the leap to salt.
