I've kept my fish for over a year now and still haven't lost interest, and I normally lose interest of things within a week. It's the fish you keep. Goldfish and Plecos don't have the same personality as a cichlid or puffer would.

I am going to work on the bottom 40. I have not been doing stuff fish related and that is why i think i am losing interest. I am going to revamp my existing tanks and get more fish. Then i will be more interested in fish.
It has become increasingly difficult doing water changes since my dog chewed up my gravel vacuum. That is why i am going to get a python water changer.
Wouldn't be surprised if you lose interest in the hobby but come back to it later in life at least that's what happened to me

There is so much you can do. Try to mimic a geography or go with a local biotope, try breeding (start easy with livebearers or bettas), go planted or go out and collect your own driftwood, set up a tank with rocks. Add shrimp or crabs, mimic a fast flowing stream or a cave. The sky is the limit.
But then, if you're really bored with it, give away your fish and store your tanks. You'll see if you miss the hobby after a few weeks, and you can start again fresh.

Adding on to what Harley said, you could see if they can keep your fish for you. You may want to do that if you get attached to your fish the way I do.
Been doing this for over 50 years. Yes, there were time I got bored with it all. What I did was think back to aspirations I had while enjoying the hobby. For instance, if there was a fish that was particularly difficult to locate, I'd go on a hunt for it. Once found, I'd make my goal one of breeding the species. I wound up gaining Master's level breeding points by spawning species that were either difficult to CB or had never spawned in captivity before. Turns out I enjoy the research and detective work as much as I enjoy keeping fish. At least, this works for me.
I don't know if you already mentioned it...but how much do you watch your fish? Sometimes staring at them for awhile can perk one's interest a little.
You seem to have a lot going on, you have lost interest, which is fine, lots of people's interests change with time and as we get older we find different things more stimulating. Take a break, sell you fish, store your tanks. You know you're neglecting your fish, which makes you more stressed, take a break, in time you may come back to the hobby rejuvenated.
