personally i think jawfish are kinda cool, as are hawkfish.
but the list is pretty endless most fish are amazing in some regards...

FW south american lungfish
SW spiny box
Brackish mud skipper

i had my spiny box trained, i would hold a shrimp an inch above the water, and he would spit at it, if he hit it, or me, i would drop it in, plus he would come to the surface and roll over so u could pet his tummy like a dog, errr, more like a hedgehog, lol

I started out by holding the shrimp just under the water level, then when i got him used to eating out of my hand i would slowly start to raise the shrimp or whatever i fed him up a little more each time untill it was completly out of the water. Eventually he would come up and try to get it and couldnt, so he would spit at it and i would drop it for him. Its actually a common thing with the spiny box. I have seen many of them do it, even without being trained. Some of them even spit better then an archerfish. It just takes some patience some times, but they will do it.

I would definitely have to say an octopus possibly a mimick octopus. They are probably the most fascinating things I have ever seen. They can change the way they move through the water to imitate a ray or even a sea snake. Not to mention extremely awesome camouflage and a body that can go through extremely small places. They are also very intelligent and can taste with their suction cups. I don't know anything about obtaining them but they are extremely well adapted to survive. I would say keeping one would be a difficult challenge though. They can get through the smallest of holes and would need a very very tight lid since they have been known to sneak out at night. They would also probably require a somewhat large tank maybe of 300 gallons. Well large for most people.
Either that or sharks. They have been perfected by millions of years of evolution to be the apex predators. They can detect weak electrical fields (ampullae of lorenzini). They are also just really fun to have.

Just a couple of ideas. If you really think about it everything has crazy adaptations to survive. Its just what is uncommon that intrigues us.
