Most beautiful North American fish??

Walleye and Pike are sweet
 
muskies, pumpkiseed sunfish, northern longear sunfish, darters, killifish....
 
Never seen a grayling before, but I just looked it up. Good call! Really really cool looking fish. That dorsal fin is awesome! Makes me wish I had a cold water tank! Good suggestion!
 
I'd say the creek chub, when you're trying to pull a hook from it, and it's rubbery and croaking and foaming at the mouth. Disgusting fish.
 
I'll bite:

Colorado Pikeminnow - It's a large Carnivorous Minnow. Points for being a Predacious Cyprinid.
Northern Pikeminnow - It's a large Carnivorous Minnow.
Gars - Crococilian characteristics, adaptable, interesting body shape and patterns, and the fact that it's primitive.
Bowfin - Primitive. Means of locomotion. Patterning. And just the overall look.
Esox Pikes - Pattern and Carnivore features. True FW Barracudas.
Paddlefish - Primitive. And it's the friggin' lovechild of the Basking Shark and Sawfish. With less sharpness.
Walleye - Nice looking fish, period.
Trout/Salmon - I just like their life histories and body forms. I can't really give specifics, as I'd like to familiarize myself with species beyond Brown and Rainbow Trout and Atlantic Salmon.
Bonytail - An interesting Cyprinid.
Humpback Chub - Another interesting Cyprinid.
Razorback Sucker - Cool looking fish.

After all, they do say that beauty is in the eye of the beholder. ;)
