you dont see them wiggle like crazy when they are broken in two? That means "Ouch" hmmmm or better yet " ARRRRRRRGGGGHHHHHHHHH"!
Yep, bonk on the head or take a sharp pointed knife and sever the spine at the base of the head. With spinal chord severed, pain receptors can not transmit to the brain and say ouch.
Removing the entire head will kill it as quickly as possible while sparing it from most of the pain. The key is using a heavy knife, e.g. a butcher knife, to take the entire head off; you must ensure that the spinal cord is completely severed, too. Other methods such as just putting it on ice are not as quick and can result in a rather slow death.
thats basic biology dude... and probably the best method if you're using a knife, as already stated if you cut its head off you better keep that head in case you get your cooler checked by a ranger

Big sharp butcher knife. One hard chop as if you want to cut through the fish and break the cutting board the fish is lying on. "CHOP"! done.
Any holding back or hesitation might lead to second chop and that will hurt the fish badly
