most humane way to kill a fish?

IMO cut the head off isn't good idea when it comes to size regulations on sportfish. Just warning for everybody. I know some people got fines for not able to have any proof that it is a legal fish and not oversized fish....this is NOT a joke!
 
Do not cut off the head, when a warden comes by and checks you're cooler you're gonna get a ticket. Just take the knife to the base of the brain where the spin meets and cut through the spin there. Itll more then likely bleed the fish out at the same time leaving you better quality meat and a smaller blood line.
 
If I keep a fish, I stick my spare fillet knife down and into the back of the head, then a swift cut down to make sure the spinal cord is cut. Takes around about 5-10 seconds to get over. I can't stand watching a fish flop around for an hour.
