I had a sb albino senegal that died suddenly after I had him for 3-4 months, so I know it happens. He was fine swimming and eating at 8pm, and when I checked the aquarium again at 12pm, he was stone cold dead. His fins and body were perfect when he died, no one else died, and the tank was fine (0 ammonia, 0 nitrites, <5ppm nitrates, 6.7pH which is normal for the tank).
I wrote a "wtf" thread in the fish disease section of the forums, and got the sage advice that sometimes fish just die. It sucks to lose such great fish :( I feel your pain.
