Are creek chubs schooling fish? I think they are bur I just want to make sure. Also could I keep a log perch with them?

Yep, Creek chubs are schooling fish, I like your 55g stock list, totally awesome (without the Warmouth, they'll eat anything that will fit in their mouth); I think a 150-200 g is big enough for the stock list you have as long as you have structure, the Brown Bullhead as stated by Mn Rebel shouldn't get over 18inches in the tank, if you get him at about 5-8 inches and give him a cave or driftwood to hide In you should be fine. Crappie are very pretty fish, I haven't ever seen a Sacramento Perch in real life (and I used to fish the Sacramento River and the American River in Sacramento CA.) but Ive heard they are less aggressive than Bass and Sunfish so you should be fine.

I think you need reevaluate on the stocklist for 150-200gal. It is not going hold all fish he has on list and need remove few of the fish.
 
I already have the 3 bluegills, They were my 2-4 native fish... I keep reading in my books and they say they need a 55 gallon, but i do not think that is 100% correct. I guess the book was wrong... I will put a lot of structure, but i will keep of open swimming area.
 
Your 55 gallon stocklist looks pretty good. Another idea might be to make it a stream tank with darters, shiners, and daces. I have a 75 stream tank going currently with a bunch of shiners, daces, and darters. I love that tank. You could also try some of the smaller species of sunfish like the orangespot or black banded sunfish. Both of those sunfish are peaceful and have incredible markings. Also, if you decide to go the creek chub route, use dark substrate. I have pool filter sand in the tank that I keep my sunfish and creek chubs in and the light color really make them looked washed out. When I had them in my quarantine tank with dark substrate their color looked much darker but with the light sand they stay pretty pale, and that's not because I'm not feeding them well or taking care of them properly.
 
Also, you could try a flat bullhead in your 150-200 gallon if you want something that will fit better. Those will get to probably right around a foot long. Not too big and not too small.
 
I'd leave the pirate perch out of the 55. Like the mudminnows, it could potentially get bullied/killed by a boisterous longear, not to mention stressed and outcompeted by large, hyperactive fish like creek chubs.
