Ammonia and it's by-products should be handled biologically - thru either natrualizing the tank or the addition of bio media. Weekly water changes handle the aspects biology can't like stabalizing the PH, introducing more dissolved oxygen, and removing/reducing the other gases (ie Carbon dioxode)
