Good luck at Johnson and Wales.....prefer the CIA myself....both great schools! Experience is way more important then schooling however.....hook up with a great chef and work your ass off.....become a sponge.....repeat. After three or four years of good high volume fine dining under your belt you will be ready to make your mark! Good Luck!

Those are Whilte Alba Truffles......pretty big ones....2000.00 per lb right now
 
my red hooks grew pretty fast,got them at 2 inches and they were well over five inches in a year.
one of them near a 8 inch oscar.

Those are Metynnis argenteus aka regular silver dollar, not Myleus schomburgkii. M. schomburgkii look like this:

they started off in the 125 gallon had to move them to a 180 as they grew,my largest one in is big as a saucer now and super thick.
 
I have 3 of the black stripped red hook. My grew from 3 to 5 inches in 6 months. Those pics in the first set are regular silver dollars. I have heard the blue hook grow faster the the red hook. Can't say never owned the blue hook.
 
I would expect your 3" EBH (blue hooks) to get to 5" in about a month depending on your feeding, tank size and water change schedule.
