Mystery snail???

Not all snails are like that. Some are prone to shell erosion from lack of calcium especially when the water is soft and acidic. Your post above just indicates you have not tried other species at all that actually need a little more attention than the "pest" snails.

I can see why you like snails so much
I'm not sure about the ghosts which is why I have not recommended them so far as I have seen a few reports about them prying off the smaller specimens such as pouch snails, how much more the apple snails. I'd err on the side of caution and get cherry shrimps instead. I had ghost shrimps before but never had any snails with them.

Yes, these snails do like to dig in the substrate when they rest or sometimes close their body partially which has been called "hamburger face".
 
Could I feed him shelled peas???

When he was in my 1.5 gallon fishbowl while I was planting the 2.5, he immediately whipped out his eyes and the white mark has shrank significantly. He will stay in my large topped bowl until further notice.
 
I have a mystery snail in with my amanto shrimp and have not had a problem...
