Looks like their gasping for breath or looking for food maybe? Breathing heavily? Skinny? Is there any air stone or power head in the tank?

Also test the water and give us the params

I was running a sump and 1 canister but I ditched the sump and went with 2 canisters

Break the surface, lift one or both filter outputs to increase surface agatation.
 
How long has the tank been running? Do you clean your canisters regularly? If clogged they can go anaerobic and cause more nitrates and ammonia. Did your sump have all of the bio-material in it? It could be removing the sump and replacing it w/ a un colonized canister is causing an ammonia spike.

Also what's the PH? I know discus like softer water, if its very hard that might be an issue

I don't think a canister would be able to hold the same amount of material a sump would, depending on the size of sump and canister. What about the other stuff?

Tanks has been up 6 months and I am getting another canister tomorrow to put the rest of the media in
