wow, i've missed this thread all along. well, the stocking possibilities are endless. in an office, you'd be better off with some nice tank decor, large boulders, wood, some easy to keep plants and creat a nice biotope with all different kinds of colorful fish from the same region. that would make it real easy on the eyes.
most people on this board, hence-monsterfishkeepers, like giant tank busting fish. I would stock it with a lot of large stingrays for bottom, some largemid water fish, like arowanas, datnoids, all eye catching with nice colors, and bring you good fortune for the business.
as for the sump size, it really doesn't matter, large or small, it depends more on the total volume of water you're circulating compared to the amount of waste your fish are producing. you could have a 1000 neons and go with a 10 gallon sump, you'd still be fine. you could go sumpless and have inline canister filters, or continuous water change systems, or combination. the same is true that you could never have too large of a sump, you could fill the entire length of the tanks with sumps on the bottom, probably will keep the system more stable for xxxl fish.
if you browse around here on the photo lounge you could get some ideas of the fish to keep. native north american fish are fine to keep, but make sure your local regulation doesn't have any bearing on what you'll be keeping.
i'd go with monster sized fish, that would take up like 6 of the 8 feet length of the tank.
