Thanks again! From the articles I've read most articles have said they're not shy at all about coming to the surface for for food and one guy specifically said his liked to steal food that was sticking from the mouths of his cichlids. They were cat of the month on Planetcatfish in May 2011 and somebody wrote a good article there and I found some other decent info on Scotcat and seiouslyfish. They all said these guys will take prepared foods but older WC specimens take longer to transition. Apparently it takes them about 3 years to max out at around 13 inches. No two fish are exactly the same and it's safe to assume he's still adjusting. I think he'll be OK. I'm at the point where I never get a new fish (especially a 200 dollar one) without finding out as much as possible about their needs and care but I'm always open and appreciative to constructive criticism and advice.
