Well this morning I threw in some cut up shrimp and wright away they were all over it ate every piece that hit the bottom. They also have chunks of there disc bitten off from a tank mate they were with will that grow back?

 
I'd keep a close eye on everything and make sure none of your other fish are messing with them. Lots of stress is bad for rays. The chunk of the disc should heal, but there may be a mark. Just keep your checking your water parameters and get into a good water changing routine. Rays produce a large amount of waste.

Also, rays take a bit of time to get used to their surroundings. They may stay buried for most of the day when in a new tank, they'll start coming out more and more once they get used to things.
