Take your frog legs, cut a way the lower portion(save just the meaty part),
Marinate in a mixture of soy sauce, Chinese cooking wine, diced scallion, garlic and ginger for a few ours...
lightly fry them until golden brown.
in a pan, heat a little bit of oil, add a few crumbled dry red chili pepper, toast a bit until the pepper turned color but not burnt; add sliced preserved orange peel; add back the legs, then add cooking wine, light soy sauce, a LITTLE vinegar, a little chicken stock, sugar, stir fry medium heat for about 10 minutes until the sauce coats the legs well(if sauce is too runny, consider adding a little corn starch water)...at the last minute drizzle a little sesame oil and chopped green onion, stir and plate.
Note: I do these things by taste and experience and don't really rely on measurements...so esp on the latter stir fry part, pay attention to the legs and adjust to your taste accordingly.
