Put them in boiling water for a bit, take them out and cut away the white membrane; change water, add ginger, cooking wine, dark soy, light soy, rock sugar, star of anise, a little cinnamon, five spice powder, Chinese peppercorn, and slow braise for an hour; cool, then slice.

Looks good after cooked & w/your description of recipe, but very gross in the raw!
