Man, you got so much to try here....

( rabbit is another thing i do not touch ):)

I love rabbit & goat, I eat it about once a month. Coniglio alla cacciatora (rabbit in tomato sauce) o capretto griglia (grilled baby goat similar to lamb). I love lamb too by the way.
 
Never eaten goat. Is the taste comparable to lamb?
I always try and eat as many types of meat as I can.
If you like lamb, you should try adult sheep.. Tastes a little stronger though :D

Rabbit I hate. I always imagine am eating a cat....
 
I had tongue before and I like it. Never really cooked it since Chinese barbecue shop tends to have them done already. I also had cooked duck tongue before. Pretty good beer food.

Only had goat as a part of a curry...sad to say, I only could taste the curry :).

Lamb I cook pretty often, roasted lamb chops and stir fry.

Rabbit I cooked as well, the loin for a quick stir fry and the rest stew. Decent. A little expensive. A whole rabbit sells for a little over $20 and that's a lot for the little quantity of meat.

Lamb and Baby Goat are similar the goat is a little gameyer (sp) I have eaten mutton before it's ok not my favorite.

One other edit: I draw the line at capuzzelle (goat head).

My kids tease me about eating cat every time I skin a rabbit. I tell them it's a chicken with 4 drumsticks. Sta zito e mangia! (shut up and eat) brats..........lol
