So question, I've seen alot of those "speed limit enforced by radar" signs lately while on vacation. Typically that's done by airplanes with the ticket mailed to you. Am I untouchable since my rental has no plates? I've been going 40-55 over all week

Absolutely not. They paint an identifying number on the roof with a specialized paint readable by specialized equipment on police aircraft.
