they werent on my walls, they were swimming wiggling around ( almost look like a thin piece of hair) and I spotted a few of them right away so I freaked out.
 
More than likely. Veggies can be left for a bit, but meaty stuff should only be left a few minutes unless it's live.

Still probably some kind of nematode.
 
how fast did you stock the fish, as you dont have a large amount of fish for the tank.

if your feeding practices have remained the same size the beginning of the tank your ammonia shouldnt have spiked when it hasnt before.

what type of fitration do you have?

FX5.. They all use to eat guppies except the angel fish. They started eating market shrimp about 3 days ago..

the shrimp then are the change that caused the spike. i personally would feed pellets to most of them, as feeders can have parasites and shrimp arent really a source complete nutrition, probably to high in protein for most fish to eat everday.
