I would go with green Cabomba. It really just adds a pop to any tank. Also they don’t need substrate so you can put it pretty much anywhere In the tank. Also bacopa. Can do well in sand substrate. It grows really fast. I would also do lots of Anubias.

Hornwort is good for an easy alternative of val. Grows very tall, very dense, very fast.

I know that you said you already have Java ferns and other rhizome plants, but to get them to take off and thrive you will need to do some kind of fertilizer dosing.

Oh, Guppy grass is another plant that is quite low on requirements and grows well for me. (Dirt bottom, no ferts, medium light and no CO2).

Hygrophila polysperma is said to be one of the easiest plant to get to grow well, even without fertilisation. But agree that it will depend on your setup, but one to try.
