Hi guys. I have a tropheus called big boy. He is alone in a 40 gallon. Not planning on adding any tank mates. What plants can tolerate high ph and wont get eaten by him? Im thinking of using floating baskets and just letting the roots hang down

I have used anubius with Africans. Java fern might work. Both have tough leaves that most plant eaters leave alone.
Crypts do on in hard water. I have some in my 55g L. Tang that’s at 9ph. Would get munched though by any salad loving grazers
Bolbitus is an East African plant that should work.

Plants like Vallisneria, Crytocorne, Andubias, Java Fern, Bolbitus and Hydrilla all tolerate high pH.
There are large plains of Vallisneria in sandy areas of the African rift lakes, and here in Panama, in Lake Gatun (where pH can reach 9) Hydrilla, Hydrocotyl, Eponema are everywhere. Floating plants like Salvinia, and Water Hyacinth also abound.
Below a couple shots collecting plants inGatun.

Below a while later after becoming established in my tank, and taking over. Hydrilla left and center, Vallisneria to the right.
the tank reaches a pH of 8.2-8.4

I see you're from NY. Why is your pH high? What does your tap water read for pH if you let a sample sit overnight before testing it?
