Some people claim that you should cut right back on the ammonia once you see nitrite appearing, since it might slow down the growth of the nitrate-producing bacteria. However, most seem to recommend sticking to 3-5ppm throughout the cycle.
I'm going with the second option and it's worked for me so far. Basically, it will work either way. Which is faster? I'm not exactly sure about since I haven't done a laboratory test to find out.

Just make sure you shake it until your arm goes numb or dead.
