Should I build the fish shed?

Should I build the fish shed, or set up the 40s inside?
You should do neither - yet.

Before you set up any more tanks you need to establish a routine with the tanks and fish you've already got, once you're certain that you can keep on top of those tanks, build the shed and add tanks to it one by one, give yourself a chance to get used to the extra maintenance before setting up another tank and so on...

Set up a routine, then take steps to make tank cleaning easier like getting more siphons for quicker water changes etc,it also helps to be nearby while doing something else like reading a good book while waiting for tanks to siphon.

I am worried. It seems like I have always taken good care of my fish up until recently and I have even taken sick fish to the vet. That is why I worry about me losing interest in my fish. For example this is a news interview from 2 years ago http://kutv.com/news/local/utah-fifth-grader-starts-petition-to-ban-goldfish-bowls
That's why I am just focusing on one large tank (240 gallons) and adding drip system so maintenance is low and I get to enjoy the tank more, I think instead of more tanks you should narrow it down to a couple large ones like 125s or a 220 and call it a day.. Then you get to actually enjoy it

I like that idea, but I want to breed fish to sell. I built the pond in the same place I said I was going to in the news interview. I am going to get a 125 for my haps and set up the 2 40s and set up the 55 I used to have set up.
