That high heat stuff doesn't work. I've used it on grills in the past and on my bike's pipes. It just flakes right off. I think I'm gonna try just keeping it all greasy when it starts to lose it's paint. Kinda like cast iron pans.

When you use a fork for your meat you let out all of the juices. Shouldn't do it. Find a good pair of tongs and use them. Saves your hands from the heat too.
