If I was to get rid of the angelfish and gourami would I have room for an oscar?

***125 GALLON: 1 Jack Dempsey, 1 Convict, 2 red jewels, 1 Green Terror, 1 Gold Gourami, 1 Angelfish, and 1 12 inch pleco.
60 GALLON: 1 Red Devil.***

I wouldn't the bioload would be heavy and a young Oscar would probably get killed or you could get a adult individual but it may eat your green terror, I've had that happen

Maybe you should just keep a pair of JD in the 125 and then maybe add some rainbow fish as dithers, they are a schooling fish with a bunch of different colors. Then maybe concentrate on breeding the Jacks like you were interested in doing with the convicts.
