I see gar at the specially fish stores all the time, so I know they are legal here.

I also don't like cichlids because they rip.apart tanks. This will be planted with drift wood, had a Oscar rip apart a planted tank once. Never again.

Snake Heads are not legal, unfortunately.

Large wolf or you could do a large puffer. Puffers are supposed to be very interactive. Mbu or Fahaka could be choices

N nzafi , Mbu’s get very large, and a Fahaka would be cool, as long as you are willing to provide a nice diet.

My vote would be a group of VATF or FATF (or BATF if you can find them), and/or a group of Red Tail Payara. Here's some of the coolest ATF feeding videos I've seen (not my tank)
