Id like to make a quick comment concerning their growth after reading the comment above I thought they were slow growers too and though they will not match the growth rate of a gator gar I believe I got my sturgeon in May of 2010 at about 2" and its easily 14" right now and nice and thick

Sterlets can tolerate up to 75F, but lower is better. I keep mine at 60F. Getting them onto Sterlet sticks is a pain. I've been trying to wean mine off of black worms, but they're stubborn. Unfortunately, they seem to become emaciated much quicker than other fish, so it's even harder to get them onto prepared foods.

It's not a good idea to have tankmates, unless you can separate during feeding time, otherwise they won't get a fair share. Most fish will pounce on food, but sterlets will mostly swim around the bottom until their barbels hit food, and then eat it.

I had several baby Siberian sturgeon on 2 separate occcaasions and they both all died suddenly. They seemed like they were gasping for air, but the water is super-well oxyginated. I still have no idea what the deal was. KH, PH Nitrates/Nitrates were all showing perfect??????? The fish we VERY healthy when I purchased them and my seller was excellent to work with and I will try again from him as soon as I possibly can. I just jhave no idea what went wrong. I even had one that doubled in size before the tragedy. I just came home from work one day and there they were. I was super-meticulous about water changes too (2x/week). My sellers name is Joszef and he will sometimes show up on ebay. I HIGHLY recommend him. He raises them himself from fertilized eggs.
 
Anyone have any idea what they think might have gone wrong????? I also treated the water for chlorine when doing the water changes and gave them saltwater baths (that they LOVED 2x/week)

You question is a lot like how do you keep a catfish without naming the species, all we can give is very general information. A large tank is good but in my experience it's best to start out with a small tank and as they grow go up a tank size every year or so. They love black worms and daphnia but most can be weaned onto pellets. In my experience tiny pellets are better than big ones.

Many species of sturgeon need cool to cold water but some do not and are quite adaptable, shovelnose sturgeon can be classed as warm water fish, they do quite well in water in the mid to high 70's and can be pushed for a few weeks a year to over 80 with good aeration. others like the California sturgeons (usually white sturgeon) really need cold water and will usually not do well at temps above high 60's or so, high temps will, if nothing else, shorten the life span of the fish drastically.

Just remember sturgeon are a diverse group of fish ranging in adult size from 12" to 20' +
