Go with a jack dempsey male, they have the same colors as a texas, but the same body shape as a jag. Its the best of both worlds, + you never know you might get a psycho jd or a very chill 1, and a 75 is more than enough room 4 one, maybe even 2. good luck.
But if it was between Texas or Jag, I would go with a Jag. 
texas suck! I've had em n they are big n fat, but they are bullies to any other fish. Jags are streamlined n quick, really cool fish to watch. Either willl try n fight any other fish in your tank, but jags are better in my opinion. They have better coloration n are cooler meaner looking fish, ya can't beat the red eyes. If you have a 75 g. an are dying ta put somthin cool in it, get a jag, just be careful about selecting tankmates, cuz they will die. seriously.
I'd say get you two jags and watch them grow or get texas and jag 75 should be enough room for the pair.
Texas have beautiful colouring, And mine just seem to have constant mood changes so the coluration is nice.

a full grown pair of jags in a 75gal.? that would never work.............
You must be thinking of something else...jags dont have red eyes. they honestly dont have as much color as a texas and usually are thicker beefier fish.
are you thinking flowerhorn or trimac by chance?
