For a 75gallon go with a male jaguar. They would normally grow around 14"-16" in home aquariums and to me 75gallon is good enough as long as water changes is keep up.
I have a male 13" jaguar in a divided 125gallon and he seems ok. I do 80% water change every week.

If you like jaguar go get one and a 75gallon is a pretty good size tank considering most if not all fish form a pet store will end up being bought by a kid and his 10gallon tank.
Another think once the jaguar hit 12" its growth slows down drastically.

Go Jack Dempsey

my previous jaguars at juvi stages has dark orange eyes (somewhat red looking at certain angles). Now at 12"-13" there is hardly any color in the eyes. I hope this clears the eye confusion.
