The largest true freshwater fish I could get with ease would be a wels (I think Arapaimas are much harder to get in Europe) from a commercial breeder. But there are also possibilities to get several species of sturgeons, including the largest one, the beluga, which can reach in exceptional cases more than 5m. But even in pond culture they can reach with enough food lengths of well over 2m within a few years.

Dude...Please tell me you saw that special on Animal Planet earlier this month....The segment was based upon on Marine biologist going around the world tagging some of the world's largest FW/SW fish....The largest(labeled #1) was a Black Marlin...SO large they had to use TWO reels to pull it in!!!!!Once they realized the size of the fish, a second boat pulled up with a diver...The diver dove in and hooked a second hook on the Marlin.....
 
Why hasn't any one mentioned the Mekong giant stingray or the chinese paddlefish to the list of largest freshwater species ?
 
Why were this species not mentioned? Because in the very first post it was asked for fish species AVAILABLE to private fish keepers. As the chinese paddlefish is nearly exterminated and the giant stingrays never available to buy, they don´t count.

And a note to the largest bony fish. It is indeed the sunfish, and not the marlin. There was one on record with a weight of 2300kg. That´s more than two times the weight of a really huge black marlin.
But to come back to the main topic, the largest species available to private keepers is surely the beluga sturgeon Huso huso. I can reach sizes even similar or over the black marlin (of course not in an aquarium or pond).
 
The (potentially) biggest fish species I've seen in private tanks were --->

Freshwater: Arapaima, Wels Catfish, Brachyplatystoma filamentosum, Paroon Shark (pretty common and I think they grow bigger than RTC, TSN and ID Shark), Alligator Gar, Nile Perch


Saltwater: Nurse Shark, Wobbegong, Blacktip reef shark, Green Moray Eel, Bumblebee/Giant Grouper, Great Barracuda

That's just a small list all of which can be found for sale in the US but the mekong and stingray.
