If you count sturgeons as saltwater fish, as many of them spent most of their live in the sea, it would be the beluga sturgeon. I don´t know how it is in the USA, but in Europe you can sometimes get them for big ponds.

I thought these were protected from harvest, I didn't think they would make their way into the aquarium trade?

I don't think Bumblebee groupers and Goliath Groupers are the same thing ! The Bumblebee grouper is also known as Giant grouper (Epinephelus lanceolatus) while the Goliath grouper (Epinephelus itajara) is a different species.
