Tropical and Native Fish Compatibility

Well I have already decided to cycle with fish but I have added some old media from my other tank already. I'll find another hardy fish to cycle with. I am just as concerned with my Fish being healthy though. If I see Any signs of sickness or weakness I do all I can to help. I am only adding 3 or 4 smaller fish to cycle though.
 
When I cycle the tank, is a firemouth hardy enough to help me cycle. It will probably be the only fish in the 75 while cycling the temp is 76 ph 7.6 and going down to 7.0 and every time ammonia goes over 0.25 I do a 20-30% water change. I have also put in some rocks from my well established 30 gallon in last night. As well as I am putting in a few cups of fritz zyme tonight.

Most of everyone is against fish cycles why are you so set on putting stress and harm to your pets? You have a cycled tank put that filter on the tank and more decor. If you said you will do anything you can when you see weakness why not start by preventing it?

Well, I think I have it down to two options now. And probably not changing my mind because I am getting the first fish tomorrow.
Option 1: 1 firemouth
1 geophagus tapajos
2 angelfish (from my 30 tall) (about 3 in long)
1 red shoulder severum
1 striped raphael catfish ( from my 30 tall) (3in long)
1 sailfin pleco (from my 30 tall) (about 3 in long)
1 synodontis decorus
2 hoplo catfish (either littorale or thoractum)

Option 2: 1 firemouth
2 angelfish
1 green severum
1 striped raphael catfish
1 sailfin pleco
1 synodontis decorus
2 hoplo catfish


I am definitely a catfish fanatic if you couldn't tell yet.
which one sounds better?
 
If I got rid of the firemouth, could I substitute it for a few rainbows (either assorted, turquoise, or bosemani).
