68* is gonna be too warm long term...and on top of that, rainbows easily reach 24"+ and are extremely active. How are you going to provide the space? Not to mention chill that much water?
 
They will be fine without current, oxygen definitely more important, especially when things warm up. Rainbows look great when they get bigger in a pond, they'll soon out grow most aquariums. I don't have rainbows at the mo, but do have a brown trout in my pond... Cool fish to keep.

Well it just so happens that I'm setting up a stream/pond less water feature in my backyard to keep trout! I can transfer the trout to the pond when it hits like 10".

Like I said, how are you gonna chill that much water? They'll die during the summer in an outdoor pond...

If I catch trout in nj in a pond, than put them in another pond in nj, it's gonna be the same temperature, right?

Depth is a factor, how shaded the pond is, is a factor, diameter is a factor, how much wind agitation on the top is a factor etc... So no

Brown trout can handle a slighly warm temperatures better than most trout. That's why the brown trout are thriving in degraded trout streams where the rainbow and brooks are unable to survive. Few degrees higher than their preferred temperatures can make a huge difference for their survivability.
