I would never keep a Cow fish in a 55 gal,i have a 125 gal tank and shortly the tank will be thinned out.

Water Cow's get 17" and Eleotris Picta IS brackish. It "may be doing fine in freshwater" but that is a sure way to kill it prematurely. It won't fit in a 55g by itself for too long, rather less with other fish. I would keep it by itself it you insist on putting it in a 55", maybe some hard fast dithers like Blue/Red Colombian Tetras. Just because it looks small in the tank doesn't mean it doesn't stretch what you have in there.
Eats like a pig=poops like a pig=will foul 55 gallons of water very quickly.
