I recently saw an episode of kitchen nightmare or whatever it's called where that famous british chef goes around helping struggling restaurants and he went to a soul food joint, that black lady that owned the place ran that place like a dictator and swore all the food and décor was perfect.

when the chef came and ordered some food, they microwaved the mac n cheese, lmao. well, they also served him some chitlins, and it looked like insides of something that used to be a living animal that was put in a blender.

I never seen chitlins or knew what it was but that was not a good first impression for me. it didn't look edible and looked like chum or pig slop

Your in Socal hit up your local street taco guy and ask for tripas Aka chitlins. You'll be hooked.

you're kinda in my neck of the woods bro. i'm out in riverside. I used to work in Ontario off of the 60 and vineyard.

i'll try it next time. do Santana's or Alberto's serve tripas?

Yeah Sumo, chitlins is pig intestines and they smell as bad as they look...So..could the chitlin taco be considered Tex-Mex?

ok, i'll bump this when I try em

my brother has a Mexican hunting buddy that is always having bbq's and what not, maybe i'll have to hit him up for some home made tripas one day

I don't mind eating intestines as long as it's properly prepped and cleaned. we have our own version I guess but it's stir fried with ginger along with other inside parts

No the chitlin taco comes from the same reason we eat chitlins. Broke people at every part of the pig. The intestine is grilled on a flat grill with some hot oil then cut up into smaller pieces and it's continued to be grilled . Throw the meat into the tortilla along with onions, cilantro and whatever salas they serve.
