What Are Your Weird Food Habits?

For dinner tonight:

1) clean and wash one pig stomach
2) in a pot, boil in hot water for 3 minutes
3) get rid of the water and wash the stomach again.
4) in another pot of water, add sliced ginger, Chinese peppercorn and star of anise, add stomach and put on medium low heat until tender 2-3 hours
5) let cool and cut stomach into thin slices, get rid of the cooking liquid
6) in a stir fry pot, in heated oil add Chinese peppercorn(huajiao), dried crushed hot pepper, heat until you can smell the fragrance, add sliced ginger, sliced garlic and the stomach, add lots of crushed white pepper powder, a little soy sauce and salt to taste, stir fry for about 3-5 minutes. Add chopped cilantro right before plating.

It looks chewy...Like calamari....what is the texture?

Oh, and just cuz I'm not a fan of the flavor, I have to ask...Does the anise flavor get strong or is it subtle with everything else in there?
 
The stomach is basically a thin stretch of muscle in between two hard linings. The long boil reduce them both down to a chewable and soft state.

Flavor wise I only use star of anise in the boiling stage. If you pay really careful attention, you might detect the flavor but to be successful, the main taste comes from ground white pepper, garlic, and with a spicy after kick.

Well, bat is not really available in the States nor China as I never had it...

I have several good recipes of pig feet and pig large intestines.

I'll post next time I cook them.
