Would a Del and Poli work if I got the 1 of each or would they be aggressive with each other?

Would work, just have to watch them carefully, del and polli are not really aggressive but sometimes they can thats why most people will do 3 polys.

Thats the dream lol, I wish I could get a tank bigger then 125 but being on the second floor means 125 is the limit

How about just sand in the tank so no one is hiding? Can't guarantee they will not hide in the pile though.

I did that before, bit they can still find hiding spot, either top of the heater, behind the heater, behind the intake filter basiclly anywhere they can fit.
