you can eat any fish that isn't poisonous really.
a few factor to consider....
1) was it ever treated with harmful meds such as copper
2) is it too small/boney "worth wile"
3) is the fish so rare/expensive...it doesn't make sense to eat at this time
4) how was it's diet

i would agree with saying probaly the most kept fish in NA that is eaten would probaly be the channels
