The cave tetras do have a decent size for a tetra but I feel they will not harm the shrimp.
Yeah, they know when the foods hit the water.
Its honestly a very active fish, and they will eat plants besides anubias.
We have 10-15 at work, really cool fish, oh and they jump!
But rather hardy.

Species only is the way to go. If you want tankmates try to find some blind cave crayfish and other blind fish species. Best of luck
