Overstocking is based entirely on several factors...

With too many fish, the filtration becomes insufficient and the fish die of pollution. With better filtration this won't happen.

If there isn't enough oxygen in the water, fish will suffocate. I've never had a problem with this myself but I'm pretty sure powerheads, filters, and air stones will add more oxygen to the water.

When fish are uncomfortable, they will become more aggressive and more vulnerable to disease. This limits your stocking too, and may be caused by a lack of shelter, loneliness, or being cramped.

It would be very easy to overstock a 55 gallon, and if your getting large cichlids your going to have to keep up on water changes. But it sounds like your going to stay ontop of that! I personally like africans. But if I had to pick a ca/sa I would get a female texas. Or maybe a JD and a school of tiger/ tinfoil barbs.
 
I would do a salvini with a JD in your 55 gallon :) That would be a pretty sweet tank! I agree with what has been said about the blue acara being to peaceful. Mine is very docile and I think a JD would destroy it.
