Whats wrong with the colour of my jack dempsey

That is an electric blue dempsey. You have what looks like white gravel? A dark substrate and a dark background will make your fish colors pop. I have 2 shubunkins in my 50 gallon with black gravel and a natural background and the orange and blues really show up

Not a Dempsey
