2 265s, Id rather have 2 completely different setups than deal with the headache of only 1 tank and being limited in what I keep

tank size only please. assume you have room for your choice no matter the size.

When you only have a 120 gallon tank, two 265s probably sounds massive. Years ago my favorite math teacher said, "Consider the source, then forget it." In your quoted case, the IGNORE feature works really well. For my fishkeeping needs, I have absolutely no use for a 265 gallon tank. And if the 500 gallon tank was glass, I wouldn't want it in my home.
