Convicts are prolific breeders and great parents.
You should add a flower pot or similiar item to the tank and let them go at it.
Convict parents will protect their babies and eggs from fish as they can. Something like a tinfoil barb should not be a problem.
Sometimes, the parents will eat some or all of the fry when they lay their new eggs to protect the new babies.
To get maximum fry, let the eggs hatch and remove all fry about 7 days after they hatch, and grow them out in a new tank. Do a big water change and feed them parents well, and you should have new babies in another week.
It is not hard to have eggs every 10 days if you remove the eggs and/or fry.
