Great to see someone put their foot down on starvation techniques!... if you toss the food to the gar or feed from tongs?... just mix in a few pellets. so it's all getting tossed together... the "juices" from the other foods should imo be enough to ellict a feeding response. My guys all took pellets when they where ready, and never looked back. My Cuban checks out new pellets... but will usually give them a try at least once, not picky.. but smart. my floridas are abit more picky.. and as suggested Krill is great, but ime expensive, so pre-soaking the pellets in chicken juice or shrimp, or whatever your offering first may do the trick. I've heard Gators aren't finicky fish.. just keep offering and i'm sure soon they'll gobble anything you offer down. they may spit them out at first because of the texture but don't get disuaded, keep offering. my gar will take sinking,floating.. you name it pellets. if they are use to eating off the bottom, try sinking. if off the top try floating.
