I know my tank was a standard stock item, and they didn't even ask my what size my doorways were when I bought it. You do know there are more then just the tanks you see at the petsmart store, right?

Your taking it too extreme. No its not a Rule that must abide by. The Standard tank size chart is just a list that used by all tank manufacturers so they can have a standard on the stands as well. If they want to make there own sizes they can. But they probably will have to make there one Stands as well as it won't be standard size. Understand? its not complicated..

If 500 people are buying aquariums and 485 of those people want something no larger than 75 gallons. Only 15 of those people want tanks with monster dimensions.
Would it make sense to build tanks for those 15 people and hope that they want to pay the high price associated with carrying the inventory, the additional materials, overhead costs, and transportation costs? Or... they could sell a bunch more of the smaller tanks and have a faster turnover.

Well I realize in your world where tank builders are concerned with narrow doorways so they won't build anything over 31". But more realistic is the fact that anything over 30" tall is near impossible to maintain(if you wonder why, go measure the length of your arm). Coupled with the fact that the taller the tank the thicker the glass/acrylic, adding a high cost for the % increase in volume. My tank was 2700 bucks for 30" tall, wouldve cost 2000 for a 24" tall. Also taller tank add more weight without increasing footprint, so this has to be figured into the construction of the stand along with the structure were the tank will be housed.
He did where? Supply and Demand that's his answer.. That's where I disagree I say it has more to do with size of average doorways in the US. I don't think were discussing the same thing. Yes if there's more people who want to buy tanks under 75g that does not change the standard sizing of tanks over 75g. Its still there on the list as a standard size. What I am discussing is how did they come up with the Standard sizing chart. My argument is the average size of doorways in the US is how standard sizes came to be. Others think its supply and demand that made up the standard size chart.
As a Standard size. They can make any size tank there customer orders.
I'm not arguing tank manufacturers make custom sizes. There are tank companies that only make custom tanks. I'm not arguing they don't exist. I have a 300g its 30" tall its a standard size 300g. It may not be a size that is sold as much as a 55g but the standard size 300 is there for anyone who wants to buy one. And a LFS can stock it as it has a dimension that will fit through any house. But they will not stock a tank that is 8x4x4 or 8x4x3 or any combination where all dimensions are over 31" cause they know it won't fit through anyones doorway.
Though ... that would make the basis for one heck of a monster dwarf cichlid tank ... great idea JK!!!
Left over bits like that are very useful for bracing on large tanks, that 8*1' piece would give two 6" strips for the front and rear of an 8' tank.
As for all this talk of narrow doors, does no one in the US have ranch sliders or bi-folds???

I agree with Bderick. Standard sizes all come down to supply and demand. Even if doorway size is a factor for some when purchasing a tank, it still comes down to supply and demand. The manufacturers will simply be building the sizes that sell the most. As such, these sizes become the norm. In saying that though, many manufacturers list many tanks over 30" wide. Manufacturers like Aquariumsrus over here have many tanks up to 36" wide in their standard listing. I see Glasscages that Bderick mentioned are the same.
Not usually inside, only the really high end houses might have french doors on the master bedroom.
Even seeing double front doors is rare now a days, a combination of heating costs and safety from intruders. Lots of houses have the rear sliders, but unless the tank is going into the room it opens into, you run into the smaller interior door issue.
Though I still think it's more a supply and demand, cost of cutting the glass/acrylic down from larger sheets (as mentioned by JK), and bad information about fish (ie, sure that male jag can live in a 55 (48"x12"x21"/120cmx30cmx53ishcm) as an adult)
