We have a 30 gal that is infested with snails - what kind of fish would be a good addition to eat them and maybe bring the population down?

What fish do you have in there now? Dwarf puffers would be fantastic but they are fin nippers. As snyno masto snyno masto said, loaches work well, but so would assassin snails (don't worry, they won't breed). These are the only ones that I really know of that WILL eat snails, I'm sure other fish will, too, but I can't vouch for them.

Cool, we have a dwarf grami, 2 swordtails, 1 baby bichir, 1pleco, and 2 synodontis cat fish right now, with some live plants (that's where they came from..). Are assassin snails common and easy to get?

Multiple local fish stores around me have them, not sure about your area, though.
https://aquaticarts.com/products/assassin-snails has them and I've ordered from them before and they are very reliable.

Welcome aboard
You can also toss in lettuce at night and remove the lettuce that the snails are attached to. Keep doing this to control the snails. Decrease your feeding for the fish.

Welcome.
You can get a fish or snail or whatever to take care of your snail problem or you can address the real issue. People dont like to hear this so sorry, but you are overfeeding. The excess food is allowing the snails to multiply. Do the lettuce/zucchini trick and watch your feeding.

I have noticed the snail egg sacs appearing, and then look later, and they are gone.. Something is eating them as I do not see massive amounts of snails (certainly not as many as I would think with all the egg sacks i was seeing (more than 30)). I looked at the assassin snails, they look pretty cool actually - I will try to feed less as well - thank you!
