I'm pretty sure the "eyes" comment had to do whether or not you purchased the non-cave versions. The ones you have still have vestigial eyes and are the cave versions.

The completely blind ones don’t moved often, and are orangish-red, I think.
Not entirely sure about this. Don’t understand how if they were completely blind they would manage to get reddish orange color. Color should have no pigment at all from the conditions they live in in the wild.
Not all of them have eyes. There’s 3 out of the 8 that have absolutely nothing where the eyes should be. I can try to get a picture of it but it may take a while. Also all the ones I have are cave which I can tell due to the loss of pigmentation
 
The ones you have seen to have very small eyes which may mean that since being in the hobby over several generations they are starting to evolve them again? Rapid evolution is a thing but idk if that’s what is going on here
I was thinking the same thing but I don’t think that years of captive breeding could reverse what’s evolution did over the course of how ever many years it took them to get to where they are now. The cave tetra was first discovered in the 1900’s so highly doubt they’ve been captive bread enough to start regaining their eyes.
