All water parameters are stable and the drylok is holding up well... except for the fact that my clown loaches are eating the background

They're unfortunately picking away at the background and there are sections where they've gotten through the drylok and are starting to dig into the underlying styrofoam. I've heard reports of them doing this with cement-coated backgrounds as well and apparently that's even worse because it causes larger areas of the cement covering to chip off.
If you want to try this with loaches I would do multiple thick layers of drylok (I only did 1-2 with a little extra "feathering") and perhaps consider covering it with a layer of epoxy.
