I actually bought a cheap tamron 18-270mm for vacations. It's not the best lens by any means, but it beats carrying 2-3 lenses around on vacation.

My other hobby is messing around in the desert, so this lens gets tossed in my truck for quick outdoor photography too.
However, I'm using canon stuff...nikon is a different world. My biggest suggestion is do a ton of research and read lots of reviews before you buy anything. And save your money for the better lenses. I bought a lot of cheap lenses when I first got my camera, and ended up selling them 6 months later because I wasn't happy with their results.

there's a reason serious photographers dont even use zoom lenses and stick only with prime lenses (50mm, 85mm, 105mm, 300mm, 600mm, etc etc)

I won't use my 18-270 any lower than f/9.0 cuz the image is so soft. I only use it out in the desert when dust and dirt will be flying everywhere or when I don't want to carry a bunch of lenses on vacation. It is, by no means, a great lens...just easier to carry when the photos don't matter so much but you still need something better than a point and shoot.
I do miss my old 70-200mm tho.It was a beast!

devder1-I too recently bought the same camera kit that you have. I also bought the Nikon 55-200 VR lens at the same time. I like it a lot. Just took it to the zoo with us last weekend and got some really good close ups with it of the animals. Check out Adorama, they have the 55-200 VR lens refurbished for 129.95 and free shipping.
